Kick-ass BBQ marinade

English, down below.Poletje se bliža vrhuncu. Tako tudi sezona grilanja. Tokrat sem pripravil super kick-ass barbeque marinado. Uporabite jo lahko s kakršnim koli mesom. Pujs, piščanec, krava, jagnje.. krokodil… karkoli.  Zadeva je res enostavna in spremeni jed v pravo BBQ specialiteto. Seveda je že samo grilanje poglavje zase, če pa se še malo bolj potrudite je zadeva enostavno fantastična. Že prej sem pisal, da sem že totalno sit klasik na grilu. Prav zato vam ponujam enostavno in super okusno reč.

Če gre naberi sveža zelišča, saj s posušenimi zadeva enostavno ne bo enaka, oziroma tako dobra, kot bi morala biti.

Kick-ass BBQ marinada:

  • 4-5 klinčkov
  • žličko kuminih semen
  • 2 žlici janeževih semen
  • 1 žlico sveže mletega črnega popra
  • 2-3 žlice soli

Sestavine stresi v terilnik in jih dobro zdrobi in premešaj. Nato jih stresi v velik pekač.

  • veliko pešico rožmarina (svežega)
  • 10 lovorjevih listov
  • pešico timijana
  • 1 glavo česna (z olupkom vred)
  • olup ene pomaranče

Vse ostale sestavine nasekljaj na drobno. Nič ni narobe, če ostanejo kakšni večji kosi. Dodaj v pekač.

  • dimljena paprika v prahu (če ne najdeš dimljene bo navadna tudi kul)
  • 1/2 steklenice poceni balzamičnega kisa
  • sok 1 pomaranče
  • 1 steklenica BIO ketchupa
  • 8 žlic ekstra deviškega oljčnega olja

Dodaj preostale sestavine v pekač. Namesto ketcupa bi lahko uporabili tudi paradižnike ali pelate. Ampak ketchup je idealen za BBQ marinado, saj je njegova tekstura bolj gosta in lepše se bo lepil na meso, ne bo takoj steklo vse v ogenj. Vse kaj moraš narediti zdaj je položiti meso v marinado in jo dobro vtreti v zareze, ki si jih predhodno naredil na mesu. Skratka, konkretno zmasiraj meso in potisni marinado vanj.

Pusti meso v pekaču in ga pokrij s folijo. V pečici peči 1 uro in 15 minut na 180°C, da okus marinade prodre v meso in da se, ko bo meso na grilu ne boš sekiral, če je že pečeno ali ne. Vmes zakuri grill in “finiširaj” meso na grilu. Skratka speči ga do zlato-hrustljavo-rjavega. Marinado imej na strani in vsakih nekaj minut “premaži” meso z marinado. Namesto čopiča pa uporabi veje rožmarina. Nič hudega, če bo meso odzunaj črno in “zažgano”, obljubim da bo super deliš. Zraven sem pripravil prilogo iz fižola in blitve (naslednji teden na blogu). Seveda ne pozabi na mrzel “pir”.

BBQ Marinade

BBQ marinade sauce, can be a lot more. Summer is in full swing, so’s the grill season. So I got here a great BBQ sauce recepie. You can BBQ sauce practically everything. What you need to do. Get a great pice of meat and very crudely cut 1 cm deep into the meat, thet way you can get the heat and the flavor into the meat and you’ll get some crispy bits. Like I said before, I’m tottaly bored out of the ordinary classics on grill. So put some effort in and you’ll have a greeeat BBQ dinner or supper. Breakfast if you want.

Kick-ass BBQ marinade: 

  • 4-5 cloves
  • tsp cumin seeds
  • 2 tbsp fennel seeds
  • 1 tbsp fresh ground black pepper
  • 2-3 tsp salt

Bash all the spices up and crack them. Then put them in a big ovenproof bowl.

  • a big handfull of fresh rosmary
  • 10 bay leafs
  • handfull of thym (pull of the tips)
  • 1 whole garlic
  • zest of one orange

Chop them up, all together. Don’t worry about some big bits, they’ll fall of the meat on the grill. Put them to the spices.

  • smoked paprika pulver
  • 1/2 bottle of cheap balsamic vinegar
  • juice form 1 orange
  • 1 bottle of organic ketchup
  • 8 tbsp extra vergine olive oil

Mix it all well together in the ovenproof bowl. You can also use tined tomatos or some salsa insteed of the ketchup, but it just hasen’t got the “stickinest” like the ketchup. What’s special about this sauce, on one hand are the cloves, thet are a must in this sauce. The mix of all thet good fresh green herbs and spices. When you’re eating it the flavors are changing in your mounth.
What you need to do now. Rub the meat in the marinade. Give it a realy fine rub. Stick your fingers into the meat. Get the marinade into it. Thet’s what’s flavor is all about. All you have to do now is put tin foil on the ovenproof bowl and put it in the oven for 1 hour and 15 minutes on 180°C (356°F). Then just finish it on the barbecue. So job done. When you put it on the BBQ it’s going to be golden and crisp. And you don’t have to worry is it cooked or isn’t it cooked. Serve it with beans and some baked onions (neex week on blog) and offcurse some good coold beer. Cheers.
